I am a Vegan becouse of, Quoting Mahatma Gandhi, You have to be the change you want to see in the world. A Vegan diet is the Healtheist,Kindest and enviromentaly friendleist diet.
Its kind to your own body, your chances of having high blood pressure,strokes,heart disease,and most types of cancer are substancialy reduced.
Vegans are not exploiting animals in anyway.So being kind. It seems to me that if you would like to see a kinder World then you have to start by removing cruelty from your own life.
Enviromentaly friendly, Animal husbandry causes more pollution than all forms of transport put together, 18%

I would like to share some vegan recipes with you. These are meals you can expect if you ever stay at Woodland.

Soups
(For these soups you need a blender)
Spinach and coconut (serves 4)
This is a delicious soup that always gets plaudits here.
Its easiest to use tinned spinach. 2 tins of spinach,half a block of coconut cream, 1 small onion,2 cloves of garlic,1 stock cube.l pint of water or stock.2 tble spoons olive oil.when the Boil the coconut and the stock cube in the water until dissolved.Slice the onion and garlic and cook in olive oil until soft.Place all the ingredients in a blender and blend together.

Squash
1 Squash,1 onion,2 or 3 cloves of garlic.1 stock cube. 1 pint of water.2 tble spoons of olive oil
cut the squash into small pieces and use the whole squash, seeds and all. Boil in the water until soft, Slice the onion and garlic and cook in olive oil until soft.When the squash is soft, add the stock cube until dissolved.place all ingredients in a blender, blend together.

Leek and Potatoe
1 large leek, 2 large potatoes, 1 onion, 2 or 3 cloves of garlic,1 stock cube.1 pint of water, 2 tble spoons of olive oil.
cut the potatoes into small pieces,use the whole potatoe,skin and all.Slice the whole leek,onion and garlic.Boil the potatoes and the green part of the leek until soft.Slice the onion garlic and the white part of the leek and cook in the oil until soft.when the potatoes are soft add the stock cube to the water and cook until dissolved. Blend together and serve.

Cauliflower and Soya cheeze.
1 small cauliflower,25 grms of soya cheese(I prefer Redwoods)1 small onion,2 or 3 cloves of garlic.1 pint of water or stock,2 tble spoons of olive oil. Chop up and boil the cauliflower in the water until soft,cook the onion and garlic in the oil until soft,chop the cheeze into small pieces. Blend all the ingredients together and serve.

MAIN MEALS

Chilli

Ingredients
1 tin or the equivalent fresh Kidney beans, 1 red pepper, 2 small,or 1 large chilli,1 med onion, garlic,sweetcorn, soya mince,(about the same amount as the kidney beans)1 tin of tomatoes.1 stock cube.1 teaspoon curry powder.4 table spoons olive oil.

Cook the kidney beans with about 1/2 a teaspoon of salt and the stock cube until soft and most of the water absorved.
Cook the pepper, onion, chilli, garlic,and curry powder in the olive oil until soft.
Mix the beans,soya mince,sweetcorn,tomatoes and the pepper onion garlic chilli curry powder,together place in an oven dish and cook in the oven on a low heat for about an hour. Serve with Rice or cuscus
